We buy our beef locally from Waugh Foods and use only prime beef, for our steaks, which we hand cut here. We use sustainable wild caught Alaskan halibut, and salmon, wild caught sashimi grade Ahi Tuna, and jumbo gulf shrimp. We grow our herbs here and make every attempt to buy local produce.
